ABOUT BALAI PATA:
For Filipinos, food is more than just a source of nutrition. It’s the glue that binds foreigners, friends, and the whole family together — to celebrate the Filipino culture, community, and celebration.
This is particularly true for Chef Joey, growing up in Bacarra, a providence of Illocos Norte, Philippines. Where his father, the late Flor Macadangdang would butcher pigs for family gathering and cater for community celebrations. Not only did this bond Chef Joey to his dad, this was the start of a culinary journey that would come full circle with the birth of Balai Pata.
After 20 years of sampling various Asian, Hawaiian, flavors, and in collaboration under different chefs and restaurants, Chef Joey took a leap of faith and launched his own brand, Joey’s Kitchen. With the success of his two locations — he received a chance call from the Food Network and their interest in featuring Joey’s Kitchen on the popular program Diners, Drive-Ins, and Dives hosted by the magnetic Guy Fieri. On this episode the popular menu item, crispy pata — a deep-fried pork trotters or knuckles was featured.
After this broadcast Joey’s Kitchen became a favorite destination for visitors and locals alike. Chef Joey ventured to launch a third location paying homage to his father, his youth, and his Filipino roots – Balai Pata.
